:D Hi There! I can't believe I found this site!! It is exactly what I have been searching for to answer some questions, please help?? I volunteered to cook and serve either Caribbean food or Greek food for my daughters class. They are studying about foods and cultures around the world and I chose Caribbean food. I'm not a culinary expert and although I love Caribbean food I'm not sure what to cook that speaks volumes about the food made and served in the Caribbean. I was thinking of cooking the following could you tell me if it is the right thing and give me some info on where I can research the history of the foods I'm cooking. I.e What makes it Caribbean..etc..
Rice and Beans (peas)
Jerk Chicken
Caribbean cake (pineapple, rum and coconut)
Fresh fruit salad( mango, papaya and others??)
Please help me out, I only have a week to plan it and get it right on!!

hey, glad to have you aboard. welcome to the yard. those foods sound good, definately caribbean. as for the history of those foods, well, thats goin to be hard. i dont know of anywhere to tell you that info. but im sure we can explain it to you here on caribyard.

let me tell you about jerk chicken (what i remember). i believe it is most popular in jamaica, it was first made in boston, portland (a parish in jamaica, similar to states in the US). it is also referred to as pan chicken, because it is made in drums. big metal drums (40 gallon i believe) are collected and cut in half, made into a stand, and it works like a BBQ.

the chicken is served with a mixture of seasonings (may be different depending on where you go) it has scotch bonnet pepper, pimento, thyme (no barbeque sauce) and sometimes ketchup.

I would give you some recipes on how to prepare Conch, but you probably would not be able to find it in Canada. :D

Hey There,
I wondered if you could all help me out with some recipes. I posted a thread above about cooking food for daughters class and I need some recipes. I know conch is quite caribbean but I don't think I could find it in my area. I need recipes that have ingredients readily available... any suggestions? :eusa_pray

Hey DV sorry I didn't see this thread before. Where in Canada are you? You can find quiet a few our of Caribbean ingredients at the West Indies stores like Nicies.

What makes our food Caribbean is the spices and seasoning that we use, such as pimento, eskellion (green onions), thyme, scotch bonnet pepper, garlic, ginger etc.

u could cook something simple nothing too complicated like..............ammmm

boiled green bananas with boiled dumplings and saltfish(cod)....normallay for breakfast

ACKEE AND SALTFISH with BOILED DUMPLING, YAM, BANANA and IRISH POTATO......or MACKEREL RUNDOWN with FRY BREADFRUIT AND/OR DUMPLING!!!!!! As they said before...anything can taste caribbean....it all comes down to the seasoning. Fresh ground provisions. No canned goods or supermarket preserved stuff!
