Okay what do you guys use to season your meats, powder or natural seasoning.Personally I like the natural seasoning like my escallion, thyme, onion, garlic, tomatoe, pimento a little green pepper etc. :eusa_droo
But then again sometimes those natural season so expensive one has to resort to powder. :(

If you can....use the natural spices...the preservatives in some of the others not good for you. I use both though....lol....but mostly the natural though!

I wish I was like you AK but I tried to minimize the number of powder season used and trust mi, I was brought up in a SPICY house and eerythign HOT. So I use:
chicken season, chicken tenderizer, salt, black pepper, paprika, seasoning salt, garlic or garlic powder sometimes both, ginger, thyme, scallion, onion...mostly whatever in the house.

Cocoa...everything I cook is very spicy and extremely hot, and I do not need a lot of powered stuff to get spicy, this is where natural seasoning comes in. Depending on what I am cooking I use different types..the basics being:
Garlic
Onion
Tomato
Ginger
Pepper (always try to get Scotch bonnet)
Black Pepper
Salt
Sugar
Paprika
Cayenne Pepper
Vinegar
Thyme
Eskellion
Soy Sauce
Pimento
After that I may add:
Basil
Oregano
Parsley
Dried red peppers
Cumin Powder
Red Wine or Wine Vinegar
Curry
Coconut Milk
Also depending on what I am cooking I may add vegetable such as carrot, mushroom, etc.
I mostly use oregano, basil and dried red peppers when I am cooking Italian.
Cumin when I am cooking Mexican.
I like Thai food, especially their way of cooking curry so I use coconut milk.
BTW any meat (not sea food) I cook must marinate overnight. If I am doing pot roast I like to season it a week before and stick it in the freezer, then I slow cook it.

Sorry but I have no intention of making another trip to Jamaica this year, unless it's family emergency. When you consider the cost, 2 trips in 5 months is enough :)

They are good season to have Cocoa trust me. Parsley, Basil, Oregano is even better fresh, just like thyme, but the dried ones work almost as well.
BTW here are some tips for anyone who may not know...if you want to keep eskellion and pepper long, wash them and freeze them.
Cocoa if you eat shrimp, here is a simple recipe I developed, I think I posted it before. Bare in mind I can not give you exact measurements since I don't use measuring spoons.
Season some shrimp with the following:
Salt
Sugar
Dried red peppers
Oregano
Basil
Parsley
Cheynne Pepper
Paprika
Cooking red wine
Dice some garlic and saute in butter, then add some onions and tomatoes then add the above. Add some parmesan cheese and simmer.
Serve over pasta.

Yes dear I will try that. I love seafood as well.
You can also put the hot country peppers refridgerator to keep it from spoiling.
I don't use measurements either, I just dash the right amount all the time in the bikkle. ;)

That is what I am talking about, freeze them. I was fortunate to get some scotch bonnet pepper on my last trip home. My best friend knows how much I love pepper and got them for me and I have them in my freezer.

I guess i get it from her. i use my blender and make my own seasoning. We have a back yard garden and i take most my ingredients (odda dan di good ole wine) from there. My mom used to grind her own curry till sum tief downtown ripped off her watch and torn her ligament some years a back. We a healthy bunch, my family!

Natural seasoning is better to me. Less worry about what's in the seasoning, it's straight from the earth!

Natural seasoning all the way, ('cept when i'm lazy or tired).
