Hey post some of your cooking tips / secrets here.
For example...season you meat with a dash of sugar...believe me it makes a diff.
Rice & Peas...I also add a dash of sugar and butter along with the usual, eskellion, thyme, pepper, garlic and pimento.

I usually add some green bell pepper aka sweet pepper to my rice and peas pot.
ANd I love to use COCONUT CREME. YUM.
Wash all meat before cooking it with vinegar or lime.

Don't know about you guys, but I hate canned stuff and only use it out of necessity (except sardines...love sardines).
Rice & Peas
So I don't like using canned peas and such. I like the natural red kidney beans but as you probably know they can take a while to cook and I also do not use pressure cookers. So here is what I do, I soak the beans with garlic and pimento over night and then cook it the following day.
I do the same thing with lima beans (butter beans) which I love, especially in oxtail :)
Speaking of which if I can get some oxtail this weekend I will cook some oxtail and bean with rice and peas :)

Jah know....needs to gets me some Oxtail too. I soak my peas over night...then boil it for about 20 mins with garlic....about 3 cloves the following day!
