View Full Version : Bacon Chicken Dinner

Try something different for you and your significant other today. Quick easy and it taste really really good.

INGREDIENTS:
6 slices bacon [I]or sausage
1 Tbsp. butter
1 Tbsp. olive oil [not the one you rub on]
6 boneless, skinless chicken breasts
1 onion, chopped
3 cloves garlic, minced
1/2 tsp. salt
1/8 tsp. pepper
1-1/2 cups shredded cheddar cheese [not the one you eat wid bun]


PREPARATION:
Cook bacon in 12" skillet [regular frying pot] until crisp, about 4-6 minutes [or more fe get off the extra fat]. Crumble bacon and set aside. Pour bacon grease out of skillet, but don't wash or wipe it. Add butter and olive oil to skillet. Saute chicken breasts in this mixture over medium heat, turning once, until chicken is cooked and no longer pink in center

Cook onion and garlic in drippings remaining in skillet. Cook until onion is softened, then stir in salt, pepper, and cooked bacon. Spoon over chicken breasts and sprinkle with cheese. Bake at 350 degrees for 10-15 minutes until cheese is melted. Serves 6 =(Americans, just enough for two J'cans) :hungry:

Another way you could do it is to season and bake the chicken. Slice it open and then stuff it with bacon, cheese and spinach and then place it in the oven until the cheese is slightly melted.

Almost like Chicken Cordon Bleu :)

LOL...well you wouldn't be getting any of the above from me....well the spinach part:)

Some steamed spinach with other veggies is what I would cook for you and if I do chicken it would be minus the cheese and bacon:) The above stuff ain't good for your ticker.

Maybe some baked lemon chicken with steamed veggies or grilled chicken/salmon and grilled veggies. That's better for you :D
