PHOULORIE
This is a snack of East Indian origin.
Ingredients:

1 cup split peas powder
1 cup flour
1 clove garlic, crushed
11/2 tsp. salt
2 dashes of black pepper
1 tsp. saffron powder or 1 tsp. curry powder
2 tsps. baking powder
water
oil for deep frying
Method:
1. Mix the split peas powder with all dry ingredients
2. Add enough water to make a thick batter
3. Leave to rest for 1 hour
4. In a medium deep frying pan, add about half pan of oil and Heat
5. Drop batter, a teaspoon at a time into the hot oil and
cook until light brown.
6. Drain and place on a plate lined with paper towel.
7. Taste for salt and dryness. If too dry, add more water to batter
before frying the balance.
This snack is usually served with any fruit chutney as a dip.

Cassava Pone (Trinidad)

Preparation Time: 15 minutes
Cooking Time: 11/4 hours
Serves: 8
Country(ies): Trinidad and Tobago

INGREDIENTS

2 cups cassava
1 cup coconut
1 cup granulated sugar
1/2 tsp. white pepper
1 tsp. cinnamon powder
100 grams GRACE HELLO SOFT MARGARINE
3/4 cup GRACE EVAPORATED MILK
1 tsp. vanilla


METHOD

1. Grate cassava and coconut, melt Grace Hello Soft Margarine.
2. Mix all ingredients, blend well.
3. Pour into a greased casserole.
4. Bake at 180°C (350°F) until firm and done.

Doubles

Ingredients:

2 lbs. flour, 1/2 oz baking powder, 1/4 lb. split peas powder.

3/4 oz instant yeast, 1 oz saffron powder, 1 teaspoon tumeric powder.

6 cloves garlic, vegetable oil for frying, salt & black pepper to taste.
Fillings ingredients:

1 1/2 lbs. channa, cooking oil, 1 minced onion, mashed potato. 1 oz saffron, geera to flavour, 2 pegs garlic, hot pepper salt and black pepper to taste.
Preparing filling:

Soak channa in water overnight. Heat pot with garlic, onion, hot pepper, saffron for about 5 minutes. Add the channa with a little salt, black pepper and geera to taste. Use mashed potato to thicken.



Preparation:
Wash split-peas and put to boil. Add garlic, salt and cook until soft.
Strain and place in a wide dish, then grind to a fine flour-like consistency with rolling pin then add and mix baking powder, yeast, saffron, flour, salt to taste.
Add water and knead to medium dough. Let it stand for 1/2 an hour.
Break into small clumps, flatten out to 4" diameter and fry in hot oil.

hi there!!! :)

I just arrive in the caribyard, all the way from germany... which isn't part of the caribbean world, I know... and I'm no caribbean girl... no I'm german... but my best friend's from trinidad and I'm looking for some typical christmas sweets from trinidad cause I know how she gonna miss home when christmas time's coming and I want to surprise she with some taste of home.

maybe somebody can help?
would be nice ;)

Hi OG welcome to CY. I have this recipe for Baked Custard are you going to do the cooking for your friend? :) If so I can give you few recipes.

BAKED CUSTARD

Ingredients
1 tin of condensed milk
3/4 cup of evaporated milk
3 eggs
1 teaspoon of sugar
1 teaspoon vanilla
1 teaspoon of grated ginger

Directions
1. Beat eggs and combine all ingredients together in a bowl.
2. Mix together. Pour in a round glass dish.
3. Bake until golden brown on top. Cut into slices and serve. Enjoy!

SWEET BREAD


Ingredients
1 cup Granulated Sugar
1 large Egg
3/4 cup Milk
1 tsp. Vanilla Extract
1 tsp. Angostura Bitters
1/2 cup Butter, softened
3 cups All-purpose Flour
3 tsp. Baking Powder
1/2 cup Mixed Peel
1 cup Raisins
1/2 cup Maraschino Cherries
1/2 cup Currants
1 fresh coconut, grated or 12 oz grated coconut
Directions
1. Pre-heat the oven to 350-F degrees and lightly oil a 9-inch by 5-inch bread pan.
2. In a mixing bowl, blend together the grated coconut, sugar, egg, and milk.
3. Add the vanilla, bitters, and butter; cream the mixture until thoroughly blended.
4. Sift together the flour and the baking powder; add to the coconut-egg mixture.
5. Add the mixed peel, raisins, maraschino cherries, and currants to the mix. Stir well with a wooden spoon to blend the fruits through the dough-like batter.
6. Pour the dough into the prepared bread pan and bake for 50 to 60 minutes.
7. Let cool for several minutes before turning the sweet bread out onto a rack to cool completely.




Cooking time: 60 min

This is some really GOOOOD PUNCH try this recipe. Good Holiday Punch too!

Basilisk's Trinidad Punch*
(drinks for the tropics or warm summer evenings)

Version One: Try this first

Input:

A bottle of the best Trinidad ("Old Oak") or Barbados ("Mount Gay") gold Rum (Barcardi Gold will do at a pinch, do not use white rum (no flavour) or Jamaica Rum (too much flavour)).
Sugar syrup (or, if you can't find it, dissolve as much white sugar in a small glass of hot water as you possibly can, then let it cool. It should be quite viscous when you've dissolved enough. It keeps for weeks)
The freshly squeezed juice of one large juicy Mandarine (Tangerine)
The freshly squeezed juice of half a large Lime (must be fresh, not Lime cordial)
Angostura Bitters
Crushed ice
Large glass
Process:

Pour yourself a generous serve of the Rum, add one nip of the sugar syrup (or more to taste), squeeze the Lime and the Mandarine (Tangerine) into the mix, add a few dashes of Angostura Bitters, stir, add the ice.

Instructions:

Sip slowly.

Version 2: Susan's special (dynamite!)

Inputs:

Large glass
two fingers of Trinidad or Barbados gold Rum
one finger of Grand Marnier
one finger of Cointreau
the freshly squeezed juice of half a large lime
a generous dash of Angostura Bitters
half a glass of crushed ice
top up with the freshly squeezed juice of a large Mandarine (Tangerine) or Orange
Instructions:

Sip very slowly.

Caution: Drink one of these too quickly, you'll start to get tunnel vision. Knock back two, and all you'll see (for a short while) is the underneath of the table.

this punch look like it might knock your boots, then maybe you boots might get knocked you know what I mean. Can you mix this in the blender with some crushed ice. i love icy drinks and i might try it like that.

Yes, I want to cook for her, I hope it'll work.
So, I checked the ingridiens and it shouldn't be a problem to get them over here.
Right now she's in Trinidad, but when she come back (which is before Christmas) that'll be my welcome-back.

im not the bartender in the family but i will see what i can find Mesinya. i have been chillin on the drinking for awhile now. I do drink alittle something on holidays and special occassion. Virgin drinks are still nice as long as they dont have to much sugar. Do you like egg nog?

Coconut bake

Coconut bake is made by almost every Trinbagonian and is a must on a breakfast table. When there's no
bread around it is a quick way to come up with a substitute.

Ingredients:

1lb 8oz Flour
1 Grated Coconut*
1 1/2 tsp Salt
2 tbls Sugar
2 tbls Butter
2 tbls Shortening
1 tbls Yeast
1 tbls Baking Powder
1 3/4 cups Water

Method:

Mix together, flour, baking powder and yeast
Add butter, shortening and the grated coconut
Dissolve sugar and salt in the water
Add water mixture to the dough and knead properly
Let it stand for 10 minutes, then roll out into 9" rounds
Place onto baking tray and let stand for another 10 minutes, then prick with a fork all over the surface
Bake at 350 degrees for 15 to 20 minutes


this is a great recipe, to have with your moring tea.

How about a macaroni pie recipe?

Ingredients

1 pack macaroni
salt, white pepper to taste
3 eggs, beaten
cheese, grated
flour
evaporated milk
stock ( from bouillon cube, if fresh is not available)
butter

Method

Preheat oven to 375 degrees

1) Bring a lage pot of salted water to the boil and add macaroni. Boil until " al dente" and strain in a sieve
with running cold water ( this will stop the macaroni from continuing to cook and getting too soft )

2) Grease an ovenproof baking dish

3) Prepare a white sauce by melting about 2-3 tablesps. butter in a saucepan, adding 2 tablesps. flour until the
mixture forms into a ball
( do not let it get brown). Now quickly add alternatively, evaporated milk and prepared stock until it forms a
smooth white sauce. Add a little salt and white pepper to taste and the grated cheese ( the amount of cheese
varies to your taste)

4) Put macaroni into the prepared baking dish, pour white sauce over it and top with more grated cheese.
Bake in pre-heated oven for about 40 mins, or until light brown on top.
