    Almond Tree Snapper with Lemon Herbed Butter

    Country(ies): Cayman Islands, United States Virgin Islands
    INGREDIENTS

    8 oz Snapper Filet
    Pinch of Black Pepper
    Pinch of Salt
    1 Cup Lightly Salted Almonds
    2 Cup Fine Breaded Crumbs
    1 Cup all-purpose Flour
    2 Eggs beaten
    3 Tablespoon Butter

    METHOD

    Rinse the fish filet and pat dry and season the Snapper on both sides with salt and black pepper. Grind the Almonds and bread crumbs to a fine powder in a food processor, running the machine in short bursts. Do not over grind or the mixture will become oily. Place the mixture in a shallow bowl, the flour in another bowl and the eggs in a third bowl.just before serving, melt the butter in a large frying pan, over medium heat. Dip each side of the fish in the flour first shaking off excess, then in mixture, then Almond bread crumbs, then pan fry until golden brown and crusty for about 2 minutes per side, then drain and transfer to plate and sprinkle with lemon herb butter.


    Lemon Herb Butter

    INGREDIENTS

    1 lb. butter
    1 tbs. lemon juice
    1 tsp. dill
    1 tsp. garlic powder

    METHOD

    Soften butter by letting sit to room temperature. Then add all ingredients then chill. When served with Snapper place a Lemon twist on top.

    Drink Recipe: Bushwhacker (There are several variations to this drink's recipe; here are two variations.)

    Recipe 1: Ingredients
    Bailey's Irish Cream
    1 splash of Amaretto
    1 splash of Vodka
    1 splash of Kahlua
    1 splash of Grand Marnier
    Nutmeg
    Ice

    Directions
    Fill blender 3/4 with ice

    Add a small splash of vodka, a small splash of Grand Marnier. Add a healthy serving of kahlua and a smaller splash of amaretto. Fill the blender with Bailey's until liquid is 1/2 inch from top of ice cubes. Mix until smooth.

    Pour into glass and sprinkle with nutmeg!

    Recipe 2: Ingredients
    2oz Coconut rum
    4oz Kahlua
    6oz Bailey's Irish Cream
    4oz Amaretto
    2oz Vodka

    Directions
    Fill blender 3/4 with ice. Add ingredients, blend. Pour in glass and add some whipped cream and a sprinkle of nutmeg.

    Sorrel

    Ingredients:
    1oz. dried sorrel
    3 slices of fresh ginger (1 inch thick)
    1 tablespoon cloves
    1 piece dried orange peel
    sugar
    10 cups boiling water
    A few grains of rice
    Optional Ingredient - 1/4 cup white or dark rum

    Recipe:
    Put water and ginger slices in a large saucepan. Cover and boil well for 3 minutes. Place sorrel, cloves and orange peel in a jar with boiling ginger-water mixture. Allow mixture to sit for 24 hours. Strain the mixture and sweeten to taste (Sorrel is quite tart, so a couple cups of sugar may be necessary.) Add rum. Pour liquid into glass bottle adding a few grains of rice to each bottle. The grains of rice are said to help quicken fermentation. Leave bottles of sorrel un-chilled for a minimum of 24 hours before serving.
